Make sure there are plenty of trash barrels! This includes in the dealers room. Remember that you can't just ask for "trash cans" because there's an excellent chance you'll get office-size wastebaskets. If you don't think you can get them from your venue, it's possible to get those disposable trash boxes from the trash haulers, either free or cheap.

One of the hurdles to getting more trash cans is that a lot of venues just don't have all that many. They are unsightly, so most events booked in not only don't use them, but don't want them seen if they are used. It is highly unusual for an event to ask for them, and especially in any large numbers.

We are very fortunate that our hotel loves us so much that they bought about 20 real trash cans just because of us.

Another useful tip is that the bus tray stands can be flipped over and used as a garbage bag holder, which will do the job almost as well as a real garbage can. Most hotels have a lot of bus tray stands because every food function will have 2-4 of them positioned near the doors.
